Chef Verlord shares how his upbringing in the Philippines shaped the menu: “These are the flavors that represent home.” From comforting classics to elevated interpretations, the dishes are crafted to evoke nostalgia while surprising the senses. For instance, the signature lobster dumplings with coconut curry showcase the region’s culinary essence—highlighting the abundance of seafood and the versatility of the coconut tree, often called the "tree of life" as all parts get utilized daily.

Pandan goes beyond exceptional cuisine by embracing sustainability in its operations. Chef Verlord emphasizes the use of Midwestern produce, such as corn for the delectable corn tempura, and a commitment to a minimal-waste kitchen philosophy. “We use every piece of product we have,” he notes. “We grow some of our herbs in house which is always a great addition to the dishes.”  He also proudly shares that their rooftop garden provides fresh, vibrant ingredients like marigolds and nasturtiums which are his personal favorites.

Beyond the lobster dumplings, Pandan offers dishes with rich narratives, such as the lumpia—a Filipino spring roll inspired by the chef’s childhood. “Making lumpia was a family event,” he recalls, describing the collaborative process of crafting the dish for family feasts, “the whole process can be pretty time consuming, but the reward is to enjoy a warm crispy lumpia with great company.” This sense of tradition and togetherness is woven into Pandan’s offerings, inviting guests to partake in a shared cultural experience.

Another way the restaurant sets itself apart is a drink only found in the place–PANDAN RUM. When "The Vanilla of Asia" meets the Caribbean’s signature drink, it creates a creamy, nutty profile, delivering a smooth and smoky flavor experience. Sourced from tropical regions, this botanical marvel transforms every sip into a taste of paradise. It pairs perfectly with citrus, coconut, chocolate, and coffee.
