Born and raised in Honolulu, his cooking blends Asian-American and tropical flavors, shaped by time spent in top kitchens like Bar Kumiko, Oriole, and The French Laundry.

The menu features Thai fried chicken wings, a rich & savory Rafute Bao, and a POG Shaved ice to close it out.

Bio:

Chef Alex was born and raised in Honolulu, Hawaii. His cooking career began at Pili Group and then at Chef Mavros where he was eventually promoted to Sous Chef. He spent some time frequenting the San Francisco Bay Area doing multiple stages at Michelin Star restaurants such as The French Laundry, Benu, and Lazy Bear. During the pandemic, Chef Alex moved himself to Chicago. He spent time at 1 Michelin Star Claudia, 2 Michelin star Oriole where he was promoted to Sous Chef, and Bar Kumiko where he was brought on to be a co-chef. Experiment 808 is a nod to his roots, bringing Asian-American and tropical influenced dishes to Chicago.
